


The nose is aromatic and filled with spicier notes, dominated by lemongrass, with underlying hints of black pepper and floral undertones.
On the palate, it offers a soft and delicate entry, with flavors of citrus and pepper that complement the juniper, accompanied by a subtle nutty sweetness from almonds and cassia bark.
The finish is slightly drying, with a lingering warmth from the black pepper and a touch of spice, leaving a clean and aromatic aftertaste.

FINISHING: Finishing is the malt master’s art of taking a whiskey that’s been matured for the majority of its life in one type of cask, and placing it in another cask type for a
period of time to add an extra dimension of flavor. The goal is to use a cask type to complement and elevate the signature character of Aultmore, not mask it.
As such, Stephanie Macleod, Malt Master, carefully monitors maturation and flavor development in each cask until the desired flavors have been achieved; then the whiskey is deemed ready to be bottled.
